Watermelon rocket salad
- 3 cups of mini rocket
- 2 big slices of watermelon cut in triangles
- ½ cup walnuts
- 20 shaves of vegan parmesan cheese
- 1 tablespoon dry oregano
- 1 tablespoon honey
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- Salt and pepper
- In a small bowl mix all the dressing ingredients together and set aside.
- In large serving platter or salad bowl. Place the rocket, watermelon triangles, walnuts, spread shaves of vegan parmesan cheese and sprinkle with oregano. Top with balsamic dressing and toss.
