Drain the cashews and place them into a blender, add the rest of the ingredients and blend until smooth and creamy.
Transfer the mixture to popsicle molds or ice-cubes molds and put them in the freezer for at least 4 hours.
If you put the mixture into popsicle molds, when solid remove from the popsicle mold, drizzle with the chocolate sauce, goji berries and enjoy.
If you put the mixture into ice-cubes, remove them from the freezer, remove the ice cream from the cases, add them into a food processor and process until ice cream consistency. You can add 2 tablespoons of coconut milk if you like the ice cream to be more soft. This way the ice cream is like a gelato.
Serve immediately and garnish with chocolate sauce and goji berries.
Chocolate Sauce
Put all ingredients in a bowl and mix well with a small spoon.
