Healthy & Creamy Chocolate Ice Cream

  • 90 gr cashews soaked in water for 4 hours
  • 1 tin coconut milk
  • 60gr agave syrup (4 tablespoons)
  • 20 gr cocoa (3 tablespoons)
  • 1 tablespoon vanilla extract
Chocolate Sauce
  • 50 gr coconut oil
  • 90 gr agave syrup
  • 70 gr cocoa
  • 4 tablespoons milk of your choice
  • 1 tablespoon vanilla extract (optional)
  • 2 tablespoons goji berries
  1. Drain the cashews and place them into a blender, add the rest of the ingredients and blend until smooth and creamy.
  2. Transfer the mixture to popsicle molds or ice-cubes molds and put them in the freezer for at least 4 hours.
  3. If you put the mixture into popsicle molds, when solid remove from the popsicle mold, drizzle with the chocolate sauce, goji berries and enjoy.
  4. If you put the mixture into ice-cubes, remove them from the freezer, remove the ice cream from the cases, add them into a food processor and process until ice cream consistency. You can add 2 tablespoons of coconut milk if you like the ice cream to be more soft. This way the ice cream is like a gelato.
  5. Serve immediately and garnish with chocolate sauce and goji berries.
Chocolate Sauce
  1. Put all ingredients in a bowl and mix well with a small spoon.
8-10 ice creams
The chocolate sauce can be used for garnishing in tarts, cakes, ice creams, truffles, etc.
