Healthy pistachio basboussa recipe

Ingredients
  • ¾ cup pistachios without the shell
  • ½ cup vegan yogurt
  • ½ cup honey or ¾ cup agave syrup
  • ½ cup vegan butter, melted
  • 1 teaspoon rose water
  • 1 cup fine semolina or cornmeal
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 3-4 tablespoons chopped almonds
  • 4 tablespoons cup chopped pistachios
  • Some honey for drizzling ( I use 3-4 tablespoons)
Topping
  • Some dried rose flowers
Instructions
  1. Preheat the oven to 180 degrees Celsius.
  2. Grind the pistachios to a powder in a food processor.
  3. In a large mixing bowl, whisk together the yogurt, honey, melted butter and rosewater.
  4. Whisk the dry ingredients together and stir them into the yogurt, honey and butter mixture.
  5. Transfer the batter to a round 25 cm pyrex or baking pan. Bake for 10 minutes. Top the basboussa with the chopped almonds and pistachios and return to the oven.
  6. Bake for another 10 minutes. Cut the basboussa into squares and drizzle it with honey. Let cool. Serve at room temperature with mastiha or vanilla ice cream.
