Ingredients
  • 1⅓ cup (180g) Instant oats
  • 1 teaspoon turmeric powder
  • 3 tablespoons vanilla extract
  • ¼ cup (60 g) olive oil
  • 4 tablespoons (40 g) coconut milk
  • ½ cup (90g) coconut sugar
  • 1 teaspoon baking powder
  • 2-3 tablespoons chopped peanuts + more for topping
Instructions
  1. Preheat oven to 160 C and line a large baking sheet with parchment paper.
  2. Add oats, turmeric, vanilla, olive oil, coconut milk, coconut sugar and baking powder in a blender, blend for a minute, put the dough In a bowl, Stir in 3 tablespoons of the chopped peanuts.
  3. Then scoop out dough in 1 Tbsp amount, form into a disc shape and place on prepared baking sheet. Top with chopped peanuts.
  4. Bake for 20 minutes, remove from oven and let cool on pan for 10 minutes.
  5. Store cookies well sealed at room temperature up to 3-4 weeks.
