Turmeric Fries with homemade vegan tzatziki dip

Ingredients
  • 8 big potatoes chopped in 1 cm thick fries
  • 1 tablespoon smoke paprika
  • 1 tablespoon fresh thyme
  • 1 tablespoon onion powder
  • 2 teaspoons turmeric
  • 6 tablespoons olive oil
  • salt and pepper
Vegan tzatziki dip
  • ½ cup sunflower seeds soaked for 3 hours 100 g
  • ½ cup cashews soaked for 3 hours
  • ½ cup water
  • 1 garlic clove
  • 2 tablespoons dried mint
  • Pepper, salt (up to taste)
  • Juice of 1½ lemon
  • 2 mini pickle cucumbers
  • 1 cucumber roughly grated and drained
  • 1-2 tablespoons olive oil + extra for garnish
Instructions
  1. Preheat oven to 220 C. Line a baking sheet. Place chopped potatoes in a big bowl field with water for 30 min. Drain liquid and dry potatoes well.
  2. Place chopped potatoes in the bowl and add paprika, thyme, onion powder, turmeric, olive oil, salt and pepper.
  3. Mix potato well, spread coated potato chips in a single layer, leaving space around each potato, on the prepared baking sheet.
  4. Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.
Vegan tzatziki dip
  1. Drain sunflower seeds, cashews and place them in a blender with the water, garlic dried mint, salt, pepper, lemon juice, pickle cucumbers, olive oil and blend until smooth and creamy.
  2. Taste and adjust flavour adding more lemon juice, salt or pepper.
  3. Add grated cucumbers and stir. Let it stand for at least 2-3 hours in the fridge. Serve cold with pita bread, salads, falafel, pasta, stuffed grape leaves (koupepia) or as dipping sauce for veggies!
