3 Vegetable chickpea vegan burgers

Ingredients
  • 1 big onion chopped
  • 2 garlic gloves
  • 1 carrot grated
  • 1 zucchini grated and drain
  • 2 eggplants grated
  • 1 tin chickpeas 400 gr (pre-cooked) drained
  • 1 cup parsley chopped
  • 6 sun dried tomatoes
  • 1 cup (100 gr) oats
  • 3 teaspoons flaxseeds
  • Pinch of cayenne pepper
  • Juice from 1 + ½ lemons
  • 2-3 tablespoons olive oil + more for brushing
  • Salt and pepper
Tahini turmeric dressing
  • 2 tablespoons any mustard you prefer
  • 3 tablespoons tahini paste
  • ½ teaspoon turmeric powder
  • Juice from 1 small lemon, to taste
  • 1 garlic clove minced
  • 1 tablespoon onion powder
  • ½ cup water
  • Salt and pepper to taste
Instructions
  1. In a nonstick skillet, sauté the onions until golden and then add the garlic, carrots, zucchinis, eggplants, sauté for another 5 minutes.
  2. Put the cooked vegetables in the food processor, add the rest of the ingredients and blend.
  3. Refrigerate for 1 hour and shape the mixture into burgers.
  4. Place a nonstick skillet over medium to high heat. Add 2 tablespoons of olive oil and let it heat for a minute.
  5. Add the burgers one at a time. Brown both sides for about 5 minutes total or if you prefer them baked brush them with olive oil, add them to a parchment-lined baking sheet and bake them in the oven at 180 C for 10 minutes. Then flip and bake for about 10 minutes more or until golden brown and crispy.
  6. These burgers are delicious with tzatziki dip, guacamole, or tahini sauce. Serve over vegetables, salad or in pita, or enjoy as is!
Tahini turmeric dressing
  1. To make the dressing, add all of the ingredients into a bowl and mix well with a spoon, or the dressing can be made in a high-speed blender.
